Healthy Chicken Salad Sandwiches (With Paleo-Friendly Version)

The recipe for the chicken salad is clean and light, and you can opt to serve it in classic bread, paleo-approved wraps, or lettuce wraps!

Ingredients
  

  • 2 cups shredded cooked chicken
  • 2 stalks celery chopped
  • 1 large apple any type (I like honey crisp), cored and chopped
  • 1 cup halved red seedless grapes
  • 1 cup roughly-chopped walnuts
  • 1/2 - 1 cup mayo according to your preferences (try Paleo mayo or halve it with Greek yogurt)
  • 1 Tbsp apple cider vinegar
  • 2 tsp finely chopped fresh tarragon
  • 1/2 tsp salt coarse sea salt preferred
  • 1/4 tsp ground black pepper

Instructions
 

  • In a large mixing bowl, place chicken, celery, apple, grapes, and walnuts. In a separate bowl, combine mayo, vinegar, tarragon, salt, and pepper for the salad dressing. Pour salad dressing into large bowl and carefully stir to combine, being careful not to bruise the fruit.

Notes

This recipe makes four super hearty servings (as shown with the croissant in image) or four regular servings, as seen in the image with Paleo wraps.
For best results, allow chicken salad mixture to chill, covered, in the refrigerator overnight.
