Smokey and a little mildly spicy, these jerk chicken thighs are so crispy on the outside, and melt-in-your-mouth moist on the inside!

Ingredients

  • 5 chicken thighs
  • 4 tsp salt
  • 4 tsp smoked paprika
  • 3 tsp onion powder
  • 2 tsp thyme
  • 2 tsp ground black pepper
  • 2 tsp garlic powder

Instructions

  • Preheat oven to 425 degrees F.
  • Place chicken thighs into a gallon-size resealable bag and set aside.
  • In a small bowl, combine all of the spices.
  • Pour spices into bag with chicken thighs. Seal the bag, and shake to coat. Continue to shape and flip the bag until spices are evenly distributed throughout.
  • Remove chicken thighs from bag and place on a baking sheet lined with aluminum foil or parchment paper.
  • Bake 425 degrees F for 25 minutes, until juices run clear.

Notes

You can substitute any cut of chicken. This is a very versatile rub.
