Twice-Baked Sweet Potato

Ingredients

  • 1 large sweet potato
  • 2 slices bacon
  • 1 tsp fat/oil of choice butter, olive oil, coconut oil, ghee / clarified butter
  • 1/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/8 tsp salt
  • 1/8 tsp ground black pepper
  • 1 stalk scallions green tops only, chopped.

Instructions

  • Preheat oven to 375 F.
  • Thoroughly wash the sweet potato under a running faucet, being sure to remove any debris or growths from the skin. Pat dry with a paper towel. Using a fork, poke a few holes into the skin. Place the sweet potato onto a baking sheet and bake for 1 hour.
  • While the sweet potato is baking, cook bacon in a frying pan. Drain fat and allow bacon to cool. Cut the bacon into bite-size pieces and set aside.
  • After one hour, remove the potato from the oven. Slice potato in half length-wise. Use a spoon to scoop out the pulp into a bowl. Add to bowl your choice of fat/oil, cinnamon, nutmeg, salt, and pepper. Mix to combine.
  • Scoop pulp back into the skin of the sweet potato. Place back into oven to cook from 10 more minutes.
  • Remove from oven, and top with bacon and chopped scallions.
