If you’ve been around on Pinterest for awhile, I’m sure you’ve seen some variation before for what I call Maple Dijon Chicken Thighs. It has been called many various things over the years such as “Man-Pleasing Chicken” or “Holy Yum Chicken“. The majority of the people who blog about this recipe all source back to The I Love Trader Joe’s Cookbook by Cherie Mercer Twohy, a culinary mastermind, apparently.

Listen, there’s a reason there are so many people blogging about this recipe. It is DELICIOUS and EASY. And it actually does please the men, as well as all women and children folk alike. In fact, it’ll put hair on your chest, so beware of that bizarre side effect. It’s just that good.

Brownies Paleo and Gluten-Free

I’m in my third pregnancy and for the health of my baby, I’m trying to not give myself license to indulge in every single craving. Otherwise, I would pretty much just eat junk food 24/7, which is what I did most definitely with my first pregnancy. I wish someone had told me that “eating for two” meant that I needed to be more careful because I have another life to sustain, it is not an excuse to gorge and eat MORE! Thus, from my most recent pregnancy cravings came the idea to experiment with some Paleo brownies! 

Paleo brownies are the perfect treat because they are sweetened with coconut palm sugar, which is super low on the glycemic index. That means so sugar crashes, and no sugar cravings later on! Really easy, these make a big batch in a 9" X 13" pan! …

Mushroom Sausage Stuffed Acorn Squash

When I made huge lifestyle changes two years ago, I was genuinely sad to say goodbye to one of my all-time favorite recipes: Mushroom Sausage Stuffing. It was one I only made on Thanksgiving, because I always felt it was so special. But alas, it was full of bread, something I was committed to cutting out if I were ever to find health. Every person is different, of course, but bread is one thing that causes inflammation and misery in my body.

Thankfully, I’ve learned that there are ways to revamp my old favorite recipes so I can still have all of the good stuff without needing the bad! It’s not about what you’ve cut out, it’s all about the good stuff you’ve added in! In this case, I took out the bread, and instead, I paired it with a beautiful acorn squash. The flavors went from just wonderfully savory to explosive!

So if you’re like me, and you need a great Paleo-friendly stuffing alternative, this one is WONDERFUL, if I do say so myself! Super delicious! (If you want to make this a Whole30 stuffing recipe, use chicken broth instead of wine.)

Teriyaki Chicken — Paleo, Gluten-Free

Two of the hallmarks of any classic teriyaki chicken recipe: sugar and soy sauce. 

Just typing that made me feel like I just had a sugar crash, that’s how sensitive I am to sugar! 

If you are looking for a clean eating version of teriyaki chicken that would omit those two ingredients (and omit flour for thickening the sauce), then this is the recipe for you!
