If you’ve been around on Pinterest for awhile, I’m sure you’ve seen some variation before for what I call Maple Dijon Chicken Thighs. It has been called many various things over the years such as “Man-Pleasing Chicken” or “Holy Yum Chicken“. The majority of the people who blog about this recipe all source back to The I Love Trader Joe’s Cookbook by Cherie Mercer Twohy, a culinary mastermind, apparently.
Listen, there’s a reason there are so many people blogging about this recipe. It is DELICIOUS and EASY. And it actually does please the men, as well as all women and children folk alike. In fact, it’ll put hair on your chest, so beware of that bizarre side effect. It’s just that good.

Sorry, Cam Newton, but according to my nine-year-old son, I win Super Bowl MVP this year for these baked buffalo wings!
They are so crispy on the outside and tender on the inside, and the flavor is to die for. I’m especially fond of them because they’re Paleo and Whole30 compliant! To make them so, I use Frank’s Red Hot sauce and ghee (aka clarified butter, but grass-fed butter also works well) for the buffalo sauce. I don’t know if it’s because I’m pregnant, but I have been dousing everything in Frank’s Red Hot sauce. It just tickles the taste buds something fierce! It’s such a great brand, and it has so few ingredients: aged cayenne red peppers, vinegar, water, salt, and garlic powder. That’s it!
As far as hot sauces go, it’s perfection.

Many years ago, while working as a massage therapist and esthetician in a large day spa, my coworkers and I had a terrible habit of taking our dinner breaks at the nearby mall food court. Panda Express was a staple for us, especially their ever-popular crispy orange chicken. Despite how much energy we burned off during our regular working hours, the food was terrible for our waistlines, but oh, how comforting it was after a hectic day!
Nowadays, I still crave that crispy, crunchy outer layer surrounding the super tender chicken inside, with its tangy orange sauce, especially after a taxing day. This craving of course inspired me to experiment with my own Paleo version at home so I can completely skip out on having to make regrettable choices that only make me feel sluggish with a major case of brain fog. (Blech.) Turns out, I much prefer my own version! It’s a big hit in our house!

Chicken Marsala is a dish that is fancy enough for impressing your dinner guests, but super simple to make. It’s the perfect amount of sweet and savory. The wine-soaked mushrooms make this dish so robust with flavor, and the chicken is just the perfect texture with the crispy crust and melt-in-your-mouth chicken breast.
My version is made using almond flour instead of regular wheat flour, making it gluten-free and Paleo compliant.
