Smokey and a little mildly spicy, these jerk chicken thighs are so crispy on the outside, and melt-in-your-mouth moist on the inside!
5 chicken thighs
4 tsp salt
4 tsp smoked paprika
3 tsp onion powder
2 tsp thyme
2 tsp ground black pepper
2 tsp garlic powder
Preheat oven to 425 degrees F.
Place chicken thighs into a gallon-size resealable bag and set aside.
In a small bowl, combine all of the spices.
Pour spices into bag with chicken thighs. Seal the bag, and shake to coat. Continue to shape and flip the bag until spices are evenly distributed throughout.
Remove chicken thighs from bag and place on a baking sheet lined with aluminum foil or parchment paper.
Bake 425 degrees F for 25 minutes, until juices run clear.
You can substitute any cut of chicken. This is a very versatile rub.
