As I write this, it so HOT in my little pocket of Southern California! (You: “How hot is it?”) It’s so hot, the classrooms in my son’s school registered 106 degrees F just two days ago! Our school district doesn’t have air conditioning in its schools. It’s maddening, but that is a hot topic (no pun intended) for another time, another venue. …Poor kids!
Needless to say, on that super hot day, I was not going to be making any chicken in the oven or on the stovetop, so the slow cooker seemed like the obvious solution. The nice thing about cooking a whole chicken in a crockpot is, in addition to keeping the kitchen cool, it makes super-easy-to-shred chicken for days! Seriously, when this comes out of the Crockpot, it just falls right off the bone, it is so tender!
Cooking a whole chicken in a slow cooker is so EASY. Just a few basic seasonings is all you need!
You can find any whole chicken, but I personally purchased an organic chicken from my market. I’ve always thought organic meat was too expensive, but this 4-lb chicken was about $13.00, which was only a couple dollars more than the big chain grocery store across the street.
It really is as easy as plopping the bird into the slow cooker, adding spices, setting on high, then forgetting it for 4.5 hours!
Be careful lifting it out because it will just fall right apart at the bones! Perfect for easily shredding the meat! The skin is even perfectly crispy. So delicious.
I literally just picked this leg right up and off the bird. No pulling, no sawing it off. And that’s a good thing because your kids will just out of sight begging for that leg… or maybe it was the dog. It’s a blur as to who was actually begging just below my line of sight here. Crockpot roasted chicken… it’s what the whole family wants.
- 3-4 lb. chicken
- Garlic powder
- Coarse sea salt
- Ground black pepper
- Unwrap chicken and check cavity for hidden giblets. Either discard giblets, or place them into a heavy duty freezer bag and freeze for later use. If desired, rinse chicken and pat dry with paper towels. Place chicken in slow cooker. Sprinkle liberally with powdered garlic. Season with oregano, salt, and pepper as desired.
- Set slow cooker on high heat. Allow to cook for 4.5 hours, undisturbed. Remove from slow cooker carefully to keep intact.
