One of my favorite things to prepare are these flavorful meatballs!
They are super versatile in how you use them. You can eat them as is, or you can add them to spaghetti sauce (or almost any sauce, really), soups, salads, potatoes, and anything else you can think of! As for me, I like them just fine on a cushion of spaghetti squash. They freeze really well, so I like to make them in bulk and save them for later. A great freezer meal option!

Back in May 2015, I started and completed The Whole30 Program. Scratch that, I did the full thirty days, but because I went out of town for a semi-impromptu vacation, I wasn’t able to do the reintroduction phase, which is the POINT of doing the 30-day elimination phase! You follow a thirty-day diet of whole foods, nothing processed, for thirty full days. When finished, you begin slowly reintroducing foods back in, one at a time, to see which foods are causing you unpleasant symptoms. Foods reintroduced would include grains, dairy, sugar, legumes, etc.
While on the program in May, I noticed many more symptoms clear up that I didn’t even realize I had!
- My anxiety cleared up.
- I experience clarity of mind.
- I had tons of energy.
- My temperament evened out; I wasn’t getting frustrated with my children.
- I kicked all cravings for sugar!
- Etc, etc, etc!
It was eye-opening to say the least!
People complain that the program is hard. And it IS hard until you get used to it. But being miserable is even harder, in my opinion. You get used to preparing everything from scratch, and used to the longer cooking times. You make it work. This is just one recipe that gets me through the busy times when I don’t have time to prepare my meal at the moment.
