Are you missing pasta? Are you possibly also missing the childhood favorite Hamburger Helper? Well, miss it no more! This recipe for Cheeseburger Casserole is the perfect substitute. (Except this version is actually GOOD for you!)
Pasta was one of the few things that I was so genuinely sad to break up with. I did try once (ONCE!) to indulge in my favorite pasta dish a few months out of surgery, and wow, did I ever regret it! I immediately prayed for death, if only to escape the agony I was experiencing in my guts.
Since then, I’ve learned to LOVE vegetable substitutes for pasta. In this Cheeseburger Casserole dish, which is a total Hamburger Helper copycat, I use cauliflower, and it is delicious!!
I promise, you will not miss your pasta dishes once you learn to make the healthier alternative with vegetables!
Just a note about making this Keto/Low-Carb: To thicken the sauce, I recommend xantham gum. But if you don’t really care about Keto, you can use a bit of regular flour, and this will still be low-carb. I don’t want you to have to go out and buy all of these crazy ingredients in order to eat healthy. Substituting cauliflower for pasta is already a big step!Print
This Cheeseburger Casserole is Keto and low-carb, and the perfect replacement for your favorite pasta dishes!
1 1/2 lbs ground beef
1 large head of cauliflower, cut into florets
2 Tbsp butter
1 1/2 cups whole milk
1 1/2 cups grated cheddar cheese
1 tsp garlic powder
Salt and pepper, to taste
1/2 cup grated Parmesan cheese
Preheat oven to 350 degrees F.
In a large skillet, brown ground beef over medium heat. After cooking, pour meat into a bowl and set aside for now.
In a large pot, bring about an inch of water to boil. Place cauliflower florets into water and steam for about 5 minutes until they are just becoming tender. Drain excess water.
In the skillet where you browned the ground beef, melt butter over medium heat. Sprinkle in thickening agent of your choice (xantham gum, flour, or arrowroot). Whisk together until well incorporated.
Slowly pour in milk and whisk together. Continue to whisk constantly until milk begins to boil and the sauce thickens.
Remove sauce from heat and stir in cheddar cheese. Add garlic powder, salt, and pepper.
Combine in skillet sauce with ground beef, and cauliflower. Carefully fold mixture to combine.
Pour mixture in a casserole dish. Sprinkle with Parmesan cheese
Bake at 350 degrees F, uncovered, for 25 minutes.
