It’s been a busy day, and I just didn’t have time to make a big production in the kitchen for lunch. I knew I had a cucumber and some chopped onions, but what about a vinaigrette? I always like lemon in my vinaigrette, but I saw these blueberries sitting in my fridge and a lightbulb went off.
After I mixed the ingredients together using an immersion blender, I added some to a bowl with my chopped cucumber and onions. I let the cucumbers and onions marinate in the refrigerator for about 30 minutes, and although the colors admittedly didn’t go well together, it was FANTASTIC. This would be great on a green salad topped with whole blueberries and walnuts!
Note: I always keep my homemade sauces and dressings in canning jars. It makes it so much easier to shake up before use! For this reason, I think canning jars are a kitchen necessity!
Blueberry Vinaigrette Recipe
1 cup fresh blueberries
1/2 cup rice vinegar
1/2 cup extra virgin olive oil
Combine ingredients in a blender, or in a bowl if using an immersion blender. Blend until well mixed.
Store in a air-tight jar in the refrigerator.
