Baby Spinach Salad in a Jar with Keto “Honey” Mustard Dressing

Ingredients

  • 1/2 cup Keto “Honey” Mustard Dressing
  • 12 Cherry tomatoes, halved
  • 8-12 Red onion slices
  • 8 oz shredded chicken breast, about 2 breasts
  • 1/2 cup Crumbled blue cheese, about 2 Tbsp per jar
  • 1/2 cup shelled pistachios, chopped
  • 4 cups baby spinach (loosely packed)

Instructions

Set out 4 clean canning jars with air tight lids. In each one, layer your salad accordingly, starting with layer 1, ending with layer 7:

Layer 1: 2 Tbsp Keto “Honey” Mustard Dressing per jar

Layer 2: 12 Cherry tomatoes, halved, 6 tomato halves per jar

Layer 3: Red onion slices, 2-3 per jar

Layer 4: 8 oz shredded chicken breast, or 2 oz. per jar

Layer 5: 1/2 cup Crumbled blue cheese, about 2 Tbsp per jar

Layer 6: 1/2 cup shelled pistachios, chopped, about 2 Tbsp per jar

Layer 7: 4 cups baby spinach, 1 cup per salad.
