You guys. I had this crazy hankering for a honey mustard dressing.
Like CRAZZZZZYYYYY cravings. (Not pregnant; I checked! ha!)
But obvs those of us who are following a ketogenic approach to rapidly shedding weight can’t have the honey part. It really screws with the hormones (specifically insulin production), and throws you out of ketosis. Do not recommend.
But hey, isn’t it awesome that there are plenty of great plant-based sugar substitutes on the market that can help soothe a sweet tooth without derailing you?
(Whether or not sugar substitutes are for you is a personal decision. They may or may not sabotage your weight loss efforts. If you’re not sure, test not having any for two weeks and see if it affects the scale. Then see what happens if you add them back in.)
OK, now those of you in the Empowered Members Club know I loves me some jars in a salad!
Let me tell you, on keto, I’m seriously NEVER hungry anymore. So if I don’t make myself some salads in a jar, I swear I would just choose not to eat at all. Why bother cooking a meal when you feel only apathy for food? (When I’m not in ketosis, I am hungry ALL THE TIME.) So having the jars of salad ready to go reminds me that my body sure would appreciate some of those amazing nutrients.
Oh, and another reason I’ve been thinking about “honey” mustard dressing?
Did you hear California currently has a huge recall for romaine lettuce?? It’s enough to make me weep, that makes me so sad. But you know what pairs well with “honey” mustard dressing??
Baby spinach. OH YEAH.
And blue cheese… and chopped pistachios… omg. Drooling now…
So let’s get to making some salads in a jar for the week ahead!! (Be sure to double or triple this depending on other members in the house, or if you want it to last you all week long.)
Come on, Baby Spinach, the usual romaine is out… Now it’s your time to SHINE.
What You’ll Need for 4 Baby Spinach Salads in a Jar:
4 Jars with airtight lids
Layer 1: 2 Tbsp Keto “Honey” Mustard Dressing per jar
Layer 2: 12 Cherry tomatoes, halved, 6 tomato halves per jar
Layer 3: Red onion slices, 2-3 per jar
Layer 4: 8 oz shredded chicken breast, or 2 oz. per jar
Layer 5: 1/2 cup Crumbled blue cheese, about 2 Tbsp per jar
Layer 6: 1/2 cup shelled pistachios, chopped, about 2 Tbsp per jar
Layer 7: 4 cups baby spinach, fresh, about 1 cup per jar
Pack up, and enjoy!
Baby Spinach Salad in a Jar with Keto "Honey" Mustard Dressing
- 1/2 cup Keto "Honey" Mustard Dressing
- 12 Cherry tomatoes halved
- 8-12 Red onion slices
- 8 oz shredded chicken breast about 2 breasts
- 1/2 cup Crumbled blue cheese about 2 Tbsp per jar
- 1/2 cup shelled pistachios chopped
- 4 cups baby spinach loosely packed
Set out 4 clean canning jars with air tight lids. In each one, layer your salad accordingly, starting with layer 1, ending with layer 7:
- Layer 1: 2 Tbsp Keto "Honey" Mustard Dressing per jar
- Layer 2: 12 Cherry tomatoes, halved, 6 tomato halves per jar
- Layer 3: Red onion slices, 2-3 per jar
- Layer 4: 8 oz shredded chicken breast, or 2 oz. per jar
- Layer 5: 1/2 cup Crumbled blue cheese, about 2 Tbsp per jar
